Knowing about the right pressure is the most important thing to achieve the desired texture when creating your dish, infusion, or drink. Equally as important is knowing how to safely use your regulator with GoldWhip tanks.
THE FOOD SCIENCE
The fats, proteins, and sugars that make up the contents of your dispenser all play a role. Fats and proteins stabilise foam and ensure the bubble remains. The more fats and proteins you have in your ingredients the more pressure is required to keep the foam stable.
YOUR DISPENSER CONTENTS
The amount of gas that needs to be added to your dispenser depends on the amount of free space in your dispenser after you’ve added your ingredients.
The fewer ingredients added, the more N2O gas (higher pressure) is required for the gas to abort and aerate the mixture.
YOUR DESIRED CONSISTENCY
The higher the pressure and therefore more gas used, the firmer and voluminous the results will be.
Depending on how you want your dish or drink to be you will need to adjust the pressure. It’s worth noting the airier the foam is, the less intense and concentrated the flavor will be.
